Instructions

  1. In a small bowl, sprinkle gelatin over 1 cup cold water and let it bloom for 5 minutes.
  2. Heat 2 cups strawberry juice in a saucepan until warm but not boiling, then stir in honey, lemon juice, and vanilla until dissolved.
  3. Add the bloomed gelatin to the warm juice mixture and whisk until completely dissolved.
  4. Pour the mixture into a shallow dish or individual molds and refrigerate for at least 30 minutes until set.
  5. Once set, gently lift the gel from the dish or unmold the individual pieces. Serve chilled, optionally garnished with a fresh strawberry slice on the side.
  6. If you prefer a firmer texture, add an extra teaspoon of gelatin and repeat the setting step.
